Tarantino,” Los Angeles native Chad Colby received his formal training working in some of Los Angeles’s landmark restaurants, including Campanile and Mozza, and through several working trips in Italy. As Executive Chef of chi SPACCA, which he opened with Nancy Silverton, he was nominated as Best Chef West by the James Beard Foundation. 


Chad now owns and operates the highly acclaimed Italian restaurant, Antico Nuovo, where time-honored cooking techniques are featured with inspiration from Italy’s traditional farmhouse cuisine.
